Coffee contains more than four hundred substances important for the taste and aroma of the final beverage: it is therefore a challenge to remove only the caffeine and keep the other substances at the same level.

How is our decaffeinated coffee made?

There are several ways to remove caffeine from coffee beans. Most ways use water, a natural solvent or carbon dioxide. It is not possible to remove all caffeine from coffee. A small amount of about 0.1 percent always remains. The first way to remove caffeine from coffee beans was discovered by Ludwig Roselius and Karl Wimmer in 1903. The beans were steamed in a solution of salt water and then the caffeine was removed with a solvent.

In the 1930s, the “Swiss Water®” method was developed in Switzerland. Swiss Water® technology is a chemical-free decaffeination process that uses only pure water to extract the caffeine from the coffee beans. Is decaffeinated coffee healthier than regular coffee?
